Before turning her attention to bean cooking, Trish Ross, author of the 2nd edition of Easy Beans, enjoyed a successful career as a Special Education Teacher and Adult Educator. In 1994, Trish and her friend and colleague, Jacquie Trafford, published the 1st edition of Easy Beans. Their goal was to write a cookbook that would make beans as mainstream and quick to prepare as pasta. For four years before its publication they studied and researched the world of beans; from preparation and nutritional aspects to exploring unique recipes from around the world. Their hunch proved correct that if they wrote a cookbook which was so simple and clear and filled with delicious recipes even the most “bean challenged” of cooks would be enticed. The 1st edition of Easy Beans has sold over 40,000 copies to date.

In 1997, Trish and Jacquie published their second book; More Easy Beans in response to a demand for more simple, delicious beans recipes. They combined more types of beans with an even wider range of ingredients.

What a dramatic change in the world of beans since Easy Beans was first published in 1994. With ongoing research into healthy diet and lifestyle there is now an even greater emphasis on legumes as an important food source. A desire by North Americans to eat healthier by cutting fat, not flavor, has sparked an even wider interest in bean cuisine. Now, there are many requests for the nutritional analysis of our recipes.

Trish has continued to research the nutritional aspects of beans and has continued to test new recipes. She decided that it was time to publish a new edition, share her new recipes and provide the nutritional analysis for each recipe. This would not have been possible without the professional assistance of Jean Fremont, R.D. who did the nutritional analysis for each recipe and compiled a chart of nutritional information about all of the legumes used in the 2nd edition of Easy Beans.

The 2nd edition of Easy Beans would have remained a dream without the amazing talents of Moira Chicilo, who did the cover design, layout, editing, and tasting of some of the recipes! Moira made this edition a reality.

Trish’s family also deserves credit and thanks for their editing, proofreading, tasting, and critiquing more bean recipes than you can imagine.
